The Council's work starts with the inspection of plots of vineyards and wineries.

-- "Rias Baaixas Rose," produced with grapes varieties albariño loureiro and by 70% at least, the remainder of the other varieties, all of them produced in the subzone of "O Rosal."
-- "Rias Baixas Salnés" produced from grapes albariño by 70% at least, the remainder of the other varieties, all of them produced in the subzone "Val do Salnés."
-- "Rias Baixas Ribeira do Ulla, produced from grapes albariño by 70% at least, the remainder of the other varieties, all of them produced in the subzone" Ribeira do Ulla.
-- "Rias Baixas" prepared from white varieties recognized produced in any of the subzones cited, using at least 70% of grapes preferred. Prepared in any of the subzones of the PDO.
-- "Rias Baixas Barrel" from wines defined above, which in its development process remains in packs of oak for a minimum period of 3 months.
-- "Rias Baixas Red", developed from the red varieties recognized produced in any of the above subzones, and in the proportions which it deems appropriate.
